  1. Para el bizcocho debemos separar las claras y las yemas
  2. Batir las claras a punto de nieve y agregar el azúcar en forma de lluvia
  3. Agregar las yemas una por una y agregar la leche con la vainilla
  4. Cernir los secos y añadirlos. Hornear a 180°C por 25 min. aprox
  5. Una vez enfriados partir a la mitad y reservar
  6. Para las tres leches debemos licuar todos los ingredientes y humectar nuestro bizcocho
  7. Para nuestro relleno o mermelada debemos lavar y desinfectar las guayabas y cortarlas
  8. Colocarlas en una cacerola a fuego lento, agregar el azúcar e intentar machacarlas solo un poco
  9. Añadir el agua con la canela y dejar al fuego, moviendo unas cuantas veces por 15 min. aprox.
  10. Reservar y enfriar. Licuar y colar. Reservar.
  11. Añadir a nuestro bizcocho
  12. Para nuestro frosting primero debemos poner nuestros blueberries a fuego con azúcar
  13. Retirar del fuego, licuar, colar y reservar.
  14. Después se acremara la mantequilla con el queso crema
  15. Añadír el azúcar y un poco de vainilla y al final los blueberries y reservar
  16. Para nuestro ganache debemos calentar la crema en baño María y una vez caliente agregar los chocolates y mover.
  17. Dejar enfriar y cubrir con film para que no se reseque
  18. Una vez que nuestro pastel ya esté armado cubriremos con un poco de chantilly
  19. Por la parte de arriba añadiremos nuestro frosting de blueberries
  20. Batiremos nuestra crema para batir y la pintaremos de colores, las pasaremos a mangas.
  21. Decoraremos con nuestro ganache y unas hojas de chantilly
  22. Añadiremos Flores con una duya y decoraremos.
