- Vamos a empezar haciendo nuestra jelly de tejocote, para vamos a cocer nuestros tejocotes con el agua hasta que se despegue la piel.



- Después, vamos retirar la piel, y los vamos a aplastar para que quede la pulpa, le quitamos la semilla y lo dejamos remojando.


- Después los machacamos y lo colamos en un colador para que obtengamos la pulpa.

- Lo ponemos en una olla, y le ponemos el azúcar.


- Finalmente vaciamos nuestra grenetina previamente hidratada y fundida a baño maría y dejamos reposar nuestra jelly.

- Ahora haremos nuestra mousse, en una olla vamos a calentar nuestra leche, con crema lyncott, piloncillo y canela.


- Mientras eso se calienta, vamos a batir nuestras yemas y el azúcar a punto de liston.


- Ya que haya hervido nuestra leche, ponemos un poco de esta para temperar nuestras yemas y ya que este igualado de temperatura, vaciamos toda la mezcla.


- Lo volvemos a hervir y dejamos reposar, en lo que nuestra mezcla se refrigera, en un tazón vamos a montar la crema lyncott hasta formar picos firmes.



- Ya que este refrigerado nuestra leche, vamos a vaciarlo en la crema lyncot y lo revolvemos de forma envolvente.


- Ahora añadimos la grenetina previamente hidratada y fundida en baño maría, y vaciamos en nuestros moldes.

- Le añadimos nuestras plaquitas de jelly, en mi caso les puse colorante rojo, para que se vean más genial.

- Ponemos una capa de mousse y una de jelly, y lo tapamos con otra de mousse, lo dejamos refrigerar y nos queda algo así.

- Ahora haremos glaseado espejo, en una olla vamos a poner agua, crema lyncott y el azúcar.



- Ya que nuestra crema haya hervido, le añadimos la cocoa en polvo.

- Finalmente agregamos la grenetina previamente hidratada y fundida en baño maría y cubrimos nuestras medias esferas de mousse y dejamos refrigerar.


- Y al final nos quedaría algo así.
